Lentil lemon soup

When I went to visit Istanbul with my friend Sarah some years ago,
I remember eating delicious lentil soup with squeeze of lemon.

It became my favorite soup and I ate this soup often during the trip.

In Istanbul any diner like places served the lentil soup.

Last year I found the recipe of this lentil lemon soup.

It is really easy to make. It is vegetarian and highly nutritious.

It is a good source of protein, dietary fiber, iron and potassium.

I am happy to add this recipe to my recipe collection!

Ingredients

Wash the lentils.




Peel the potato cut into cubes.

Peel the onion, and cut into cubes.

Melt the butter (25g) in a pot and
sauté the cut onion until it become little transparent, 
then put the potato, sauté until golden.

Put lentil in a pot and mix with onion and potato
then add 4 cups of water.

Add salt and cumin, then boil until lentils and vegetable are cooked.



Puree with a hand blender until it has the consistency of strained soup.

Melt the butter (25g) in a pan,
then add 1 Tablesspoon of flour and cook.
Dilute it in one cup of water.

Add this mixture to the soup.
Bring the soup to a boil once more. 




Add lemon juice to taste.
