Nonstick pan

Revive Nonstick pan Nonstick again.
Rénover une poêle anti-adhésive.

Non stick pan by Yukié Matsushita
"Une poêle à frire" (a frying pan) and "de l'huile" (oil) are feminine words.
"Du vinaigre" (vinegar), "du bicarbonate de soude" (baking soda), and "un chat" (a cat) are masculine words.

A great chef cares about having good kitchen equipment.
When my uncle Hidéo was visiting Paris, not only did he cook for us, he sharpened all our knives also. "People have good knives, but few know how to take care of them and know how to sharp." said uncle Hidéo.
Another thing uncle Hidéo taught me was how to revive my old nonstick fryng pan which I was about to throw away.

Be careful : The operation involves manipulating water and very hot oil.
- Read the method well before proceeding.
- Prepare suitable containers (clean, dry, and stable).
- Avoid obstacles when manipulating.
- Be careful of splashes.
- Wear adapted clothing and oven mitts.
- NEVER put water into hot oil !

First, clean the pan well:
D'abord, nettoyez bien la poêle :

Put some white vinegar and water in equal quantities, add 1 teaspoon of Basking soda in the frying pan.

Boil the mixture for 5 minutes, then wash it off with water using a soft sponge and dry well.
Now the pan is clean and dry.

Pour frying oil (high temperature) generously and spread the oil all over the inside of the pan.

Heat up and bring the oil to the highest recommended temperature, do not burn the oil.

Remove excess hot oil by pouring into a suitable container.

Turn the hot pan UPSIDE DOWN and cool it quickly under running water. Once cold, dry the pan well with a dry towel, wipe the oil with soft absorbing paper.
Repeat the process -hot oiling; -cooling; and drying. Now your nonstick pan is nonstick again.

Many thanks to my uncle Hidéo for teaching me this.

Merci à mon oncle Hidéo de m'avoir appris ceci.

"Une poêle à frire" (a frying pan) is feminine word.
"Un chat" is a masculine word even it is an orange cat.

Lomi Lomi Salmon

Lomi Lomi Salmon by Yukié Matsushita

My uncle Hidéo and aunt Mikiko were visiting Paris from Hawaii. Hidéo was living in Paris 45 years ago and working and learning French cuisine at Hôtel St Jacques. He has been a grand chef for many years, he was honored to serve the emperor of Japan.
Cooking is his passion that even during his vacation he did not stop cooking. He shared with us is a recipe of "Lomi Lomi Salmon", a popular Hawaiian side dish (Lomi lomi means to massage in Hawaiian). This is an easy recipe and refreshing dish to serve during the summer.
